Oftentimes when one hears the term “meal prepping” an image of an entire day spent cooking meals for the week with numerous dirty dishes comes to mind. A Second Me can help with your meal prepping woes, but we’ve done a little digging and have found some easy nonperishable recipes that will make dreading meal prepping a thing of the past. Whether you’re caring for an elderly family member and would like to help them prep their food to ensure they eat nutritious meals, or you’re simply prepping meals for yourself to help save some extra hours throughout the week, these recipes will help dispel stress from meal prepping and will be sure to keep you and your loved ones energized throughout the week!

Breakfast
Meal Prep Overnight oatsThis is our favorite meal of the day, and arguably the most important! What you or your loved one eats for breakfast helps to frame better food choices throughout the day. If you eat a fulfilling and nutritious breakfast in the morning, you’ll wake up more energized and will most likely want to continue the good feeling from your breakfast and make healthy meal choices throughout the rest of the day! We loved this meal prep overnight oat recipe from Food Network. Overnight oats are a great way to save time in the morning, while also ensuring that you keep your appetite at bay. Simply prepare your oatmeal and toppings in a Mason jar or other container the night before, and store it in the fridge overnight. You’ll wake up the next morning with the breakfast of your dreams, and with virtually no cleanup or rushing.

Lunch
Meal Prep SaladSay goodbye to usual lunches of boring sandwiches and say hello to an easy and delicious meal prep salad that will last in your fridge for the whole week! This salad can be as simple or fancy as you want it to be. The key to keeping all ingredients fresh for the week is storing the contents of your salad for the week separately. All you have to do on Sunday or on your designated meal prep day is chop whatever vegetables you’d like to include in your salad, hard boil eggs for extra protein, and pack a large bowl of fresh salad that will keep you nourished for the rest of the week. Simply chop fruits and vegetables that pair well in smoothies and freeze them in individually portioned bags ready for the blender at any time! We love banana, strawberry, peanut butter, honey, and almond milk smoothies. All you have to do is peel and chop a banana and some strawberries, secure them in a plastic baggie, store in your freezer, and voila – a tasty and easy smoothie ready for you or your loved one!

Dinner
Meal Prep SoupThere’s nothing easier than making a soup in bulk to help satisfy your dinner needs for the rest of the week! We found this lemon chicken orzo soup recipe, and it’s on the top of our list to try the next time we meal prep. Replacing noodles with orzo in the recipe will help keep your soup tasting better longer as the orzo won’t become mushy like normal noodles do in some soups. Even if you don’t feel like having this for an entire week, make extra and freeze individual portions. That way, if you or your loved one is in a rush and need dinner fast, this soup will be ready in no time with the press of the microwave button.

Even those with a sweet tooth can meal prep! Next time you’re in the mood to bake some cookies, opt for baking some bar cookies instead. Bar cookies are essentially just cookies, but in a bar shape which enables the cookie to last in the freezer longer for even more enjoyment. You can customize your bar cookie with any classic or “out there” flavor. Follow these simple recipes and bake/prep away! Our favorite is the M&M bar.
